This recipe is super easy and so good for a simple week day dinner and can be dressed up for a dinner with guests too. It's also really easy to modify and add/change!
Ingredients:
1 package frozen chopped spinach
1 tub of cottage cheese
1 can of artichoke hearts
1 1/2 cups of mozzarella cheese (plus a bit more to sprinkle on top)
1 jar of your fave pasta sauce
1 egg
1 box of jumbo pasta shells
Pre-heat oven to 400F
1. Mix thawed spinach (drain really well), artichoke hearts (also drained), 1/2 tub of cottage cheese (or more, if you love cottage cheese), egg, mozza cheese together in a large mixing bowl.
2. Boil jumbo pasta shells. Remove from heat and drain when al dente and rinse with cold water. Don't over cook, or they will be too soft and rip while trying to stuff them. Once cool, spoon full of stuffing (feel free to overstuff!) and place in lasagna dish that has a thin layer of pasta sauce along the bottom. Line dish with stuffed shells. Once filled, pour remaining pasta sauce overtop, sprinkle with mozza cheese, cover and bake for 25 minutes. Uncover and bake another 10 minutes.
This is really really yummy with ceasar salad!
I've also made this recipe using fresh spinach, fresh artichokes and homemade pasta sauce and it is even better tasting.... just WAY more time consuming! Also super yummy for leftovers or lunch the next day.
