    Here is my recipe for homemade banana bread!
    The recipe is actually vegan, but don't let that scare you away! It makes 3 small loaves (I have really tiny loaf pans) and they literally last 2 days at most!

    *Makes 1 9x5 loaf*

    Ingredients:

    *2 cups all purpose flour
    *3/4 cups white granulated sugar
    *1/2 cup dark brown sugar, packed
    *3/4 t baking soda
    *3/4 t salt
    *3/4 t cinnamon
    *1/2 cup plain soy milk OR almond milk (we use almond)
    *1 t apple cidar vinegar
    *2 cups mashed banana (approximately 4 bananas, very ripe)
    *1/4 cup canola oil
    *1 t vanilla extract
    *2 T maple syrup
    *walnuts (optional, I personally have never added them)

    1. Pre-heat oven to 350F lightly oil 9x5 pan and set aside.
    2. In medium bowl, sift together flour, sugars, baking soda, salt and cinnamon.
    3. In large mixing bowl, mix (whisk)soy/almond milk and cidar vinegar- let stand 2 minutes. Add mashed banana, canola oil, maple syrup and vanilla. Whisk until well combined. Combine wet and dry ingredients. DO NOT OVERMIX! Pour into prepared loaf pan.

    Bake for 1 hour. Allow to cool 20 minutes.
